I love easy sandwiches for lunch or dinner. This easy tomato-artichoke sandwich is super refreshing with the edamame spread and put together in no time. I can recommend to use tomatos you can find and fresh basil. The recipe is inspired by a recipe on one of my favourite food blogs Love & Lemons.
Ingredients (serves 4)
Edamame spread:
150 g edamame
3 tablespoons lemon juice
1 tablespoon chopped red onion
1 small garlic clove, crushed
3 tablespoons olive oil
3 tablespoons water
1 teaspoon salt
Sandwiches:
8 slices of whole grain bread, toasted
handful of salad greens
2 tomatoes, sliced
10 basil leaves
10 jarred roasted artichokes, cut into quarters
pine nuts
How to
Place the edamame, basil, lemon juice, scallions, garlic, and sea salt into the bowl of a food processor. Pulse until chopped. Add the olive oil and blend until smooth. Add up to 3 tablespoons of water to create a smooth, spreadable consistency. Season to taste and chill until ready to use.
Assemble the toasts with the edamame spread, greens, tomatoes, basil, artichokes and pine nuts. Finish with salt and pepper and a drizzle of olive oil.
